Three Fat Pigs

The Three Fat Pigs is a restaurant located in the King's Shops Shopping Center in Waikoloa on the Big Island of Hawaii.

We accidently found the restaurant as we made our way from the airport towards our hotel. I was driving . . . trying to absorb all the sights. We saw the restaurant sign. I made an instantaneous decision and immediately did a bat turn, that would have made a fighter pilot proud, into the parking lot and parked.

We made our way to the restaurant not sure of what we would find. On our arrival at the hostess station we discovered the restaurant was opened by Chef Ippy. Chef Ippy has been on the Food Network Channel. This was a promising start.

We decided to have dinner on the patio. Can't have dinner on the deck in our hometown of Anchorage, Alaska in November so it was a treat to eat outside. The server brought wine and menus. After looking at the menu I settled on the pork belly. I was set on pork belly until the server told us the mahi mahi was caught that afternoon by one of the restaurant employees. We both switched our dinner choices.

Very glad I switched my dinner choice to the mahi mahi. Same day fresh caught has such a great flavor and texture. Chef Ippy and his staff lightly prepared the fish and did not over cook the fish. The natural flavor of the fish was the star of the dish. The best fish I've had all year.

Perhaps I'll return for the pork belly.

Hawaii Hilton- Grooming for Guests

These two birds were grooming themselves when we walked by them. They might as well groom themselves and look good, for they were the celebrities of the hotel.

I'm at the Hilton by Kona on the Big Island of Hawaii. This is the view of the golf course from my balcony. Not much to see from my balcony but it is a great place to drink coffee, enjoy the warmth and watch the grass grow.
